Pancakes!

Yesterday, we had a breakthrough! After his normal dinner of butter noodles, Evan asked for french toast. He had not eaten much for lunch and very few noodles, so Steve said ok and cooked the breakfast favorite. After the french toast, Evan said he wanted a pancake. What?! I have tried to get him to eat pancakes forever and every time I get the same response, 'I don't like pancakes.' Usually followed by him quickly running away. Well, I figured he would not eat them, but I would let him tell me again that he didn't like them after they were made. Fast forward to cooked pancakes on a plate with syrup... Being munched down with the occasional 'mmmmm!' mixed in! I couldn't believe it!! Now, some of you may not think this is a breakthrough. You may think, 'How could she be excited about a nutrient-less pancake!?' Around here... We will take ANYTHING we can get!! AND I am getting good at justifying the limited nutrients that we do find in the things he eats. (for example: there is healthy zucchini in zucchini bread, there are eggs in pancakes, and think of the protein in chocolate milk!) :)

Trust me, he is a boy, pretty soon he will be eating everything and anything; you will not be able to keep your cupboards stocked. Enjoy the time now where he is picky you will wish for it again someday when you are making him 3 dinners every night. :)
